White pearl barley salad with preserved lemon, parsley and celery

Ingredients: 

white pearl barley (see note)
black manzanilla olives, pitted, crushed
flat-leaf parsley, coarsely chopped
spring onion bulb, shaved widthways
celery heart, shaved widthways

Preserved lemon dressing
lemon, juice only
preserved lemon, rinsed, flesh and pith removed, rind finely chopped
garlic clove, finely chopped
(ΒΌ cup) olive oil
