Yam, Jicama, and Mango Salad (Wegmans)

Ingredients: 

1 1/2 lbs yams, peeled, 1/2-inch dice (about 4 cups)
5 1/2 Tbsp Wegmans Pure Olive Oil, divided
Salt and pepper to taste
1 jicama (about 1 lb), trimmed, cut in thin strips (about 3 cups)
2 pkgs (9 oz each) Food You Feel Good About Mango Chunks, 1/2-inch dice
1/4 cup chopped cilantro
Juice and zest of 1 orange
Juice and zest of 1 lemon
Juice of 2 limes (about 5 Tbsp)
2 Tbsp Wegmans Apple Cider Vinegar
1/2 tsp ground allspice
