Assorted Veg - squash, romanesco, carrots, greens, banana pepper
coconut milk
cornstarch, fish sauce, s+p
If you have it: curry paste, grated ginger, garlic, herbs like thai basil
Add oil to frying pan. Then add 2T curry powder and stir.
Add 3T crush tomato or chopped tomato and stir.
Add chopped chicken and cook.
Add onions and sautee.
Add remaining veg and sautee
Add half can coconut milk to frying pan. Then add 1T cornstarch to remaining coconut milk and stir to create slurry. Then add the cornstarch/coconut milk slurry to frying pan.
Flavor to taste with a dash of fish sauce, curry paste, grated ginger, garlic, and/or spicy herbs like thai basil.
