Yogurt and strawberry filled crepes

Ingredients: 

Servings (6)

1/2 Cup egg substitute
1 Cup all purpose flour
1/2 Cup whole wheat flour
1 1/2 Cups nonfat milk
1 tsp vanilla extract
3/4 Cup low fat vanilla yogurt
1 1/2 cups chopped strawberries


1) In a large bowl whisk together eggs and flour gradually add eggs milk and vanilla stirring till combined

2) Lightly coat a six to seven inch pan with cooking spray and place over medium heat

3) Using a measuring cup poor thin layer of batter into the pan (about 3 tablespoons of batter per crepe) tilt the pan until the batter coat the bottom of the surface evenly

4) Cook the crêpe for about 30 seconds until the bottom is lightly browned. use a rubber spatula to flip the crepe and cook for another 30 seconds

5) Repeat until you have used all of the remaining batter
(Batter yields about 12 crepes)

6) Fill each crêpe with 1 tablespoon of yogurt and 2 tablespoons of strawberries. role and enjoy
