For the pastry cream
300ml whole milk
60g caster sugar
30g unsalted butter, cut into 2cm dice
Scraped seeds from ½ vanilla pod
1½ tbsp cornflour
2 large egg yolks
Salt
10g basil leaves, finely sliced
For the macerated strawberries
400g strawberries, hulled and cut lengthways into 0.5cm-thick slices
3 tbsp caster sugar
2 limes, skin finely shaved, then juiced to get 3 tbsp
10g basil leaves
Seeds scraped from ½ vanilla pod
1 tbsp pistachios, lightly toasted and roughly chopped, to garnish
For the pastry case
320g ready-rolled puff pastry sheet
1 large egg, beaten
1½ tsp caster sugar
