Yummy Tuna Melts

The original recipe did not have cheddar cheese, only Mozzarella (1/3 cup). The sandwich is messier with the cheddar, but I like cheddar with tuna. Also I like dill with my tuna and that was not in the original either, so adapt to your taste likening is needed.

Ingredients: 

Tuna, 2 x 5oz cans, drained
Onion, medium size, chopped
Celery, 1 stalk, chopped
Garlic (2 cloves), minced
Parsley, 1 to 2 tablespoons
Mayonnaise, 4-5 tablespoons
Extra Virgin Olive Oil, 3 tablespoons, divided
Mozzarella cheese 1/4 cup
Cheddar Cheese 1/3 cup
Bread, sliced
Butter, softened
Dill weed, 1/2 to 1 teaspoon
Salt and Pepper to taste


  1. Drain water from tuna and put the tuna into a meduim bowl.
  2. Chop onion, celery, and parsley. Mince garlic and add ingredients to tuna.
  3. Add mayonnaise, olive oil and cheeses. Combine all ingredients until well incorporated. Add dill and salt and pepper to taste.
  4. Place a non-stick skillet on the stove and add 1 tablespoon of extra virgin olive oil. When the skillet is hot, take a slice of bread and generously spread butter on one side.
  5.  Place about 2 scoops of the tuna mixture on the bread and top with other bread slice. At this point I cut them in half as it makes it easier to turn them in the skillet.
  6. Place halfs in the skillet two at a time (one sandwich). Keep the temperature at a consistent heat as they are easy to burn.
  7. Butter the top as the bottom is browning.
  8. Using a spatula, check to see if the bread is toasted brown. If so, turn the tuna melt over and brown the other side until it's golden brown. Also the cheese should be melted. 
  9. Keep going until your tuna mixture is gone. Enjoy.
