Ingredients: 

1/3 cup coconut oil (coconut oil is perfect for this recipe, but canola will work if you’re unable to find coconut oil)
¾ cup honey
1 egg
1 teaspoons vanilla extract
1 cup grated zucchini
½ cup Greek Yogurt, plain, low fat
1-1/2 cups White Whole Wheat flour
¼ teaspoon salt
1 teaspoon baking soda
1 teaspoons cinnamon
1 cup chopped walnuts or pecans (optional)
