Zucchini Noodles with Pan-Fried Tofu

Ingredients: 

3 large zucchini
1 large carrot, peeled
3 tablespoons soy sauce
1 1/2 tablespoons sesame oil
1/2 teaspoon rice vinegar
1 pound (1 block) extra-firm tofu
1 to 2 tablespoons peanut or vegetable oil
1/2 tablespoon minced or grated ginger
Salt and pepper to taste
1 teaspoon white sesame seeds
Nori strips, optional
