7-Day Bran Muffins

Notes: 

A strange name for a strange preparation. You make this batter and let it rest in the refrigerator 5-7 days before using. They are so incredible that Donna used to sell these to local restaurants when we lived in Vermont!

Ingredients: 

1/2 25oz box raisin bran cereal
1/c up raisins
3 cups sugar
5 cups all purpose flour
5 teaspoons baking soda
2 teaspoons salt
1/2 teaspoon cinnamon
4 eggs
1 qt butter milk
1 cup oil
**This makes a large batch of batter you will need a large airtight container to store the batter in your refrigerator.**


  1. Simply mix together all ingredients in a large air tight container
  2. Let rest in refrigerator for 5-7 days
  3. Prepare muffin tins and simply scoup our batter for individual muffins on an as needed basis. That way you are always baking up fresh muffins
  4. Bake at 400 for 20 -25 minute
  5. Makes aproximately 4-5 dozen muffins.
