Amatriciana tomato sauce


2 tbsp. vegetable oil
1 tbsp. unsalted butter
1 medium onion, chopped fine
2 oz. pancetta, cut into cubes of about ΒΌ-inch
28 oz. can imported Italian plum tomatoes, drained (juice reserved) and diced
Generous pinch of red chili pepper flakes
Salt, to taste
1 lb. bucatini pasta (may substitute another pasta, such as penne)
3 tbsp. grated parmigiano-reggiano cheese
2 tbsp. grated pecorino romano cheese
