Apple Cinnamon Overnight Oats

Ingredients: 

½ granny smith apple, peeled and chopped, divided
¼ cup rolled oats
½ tsp cinnamon, divided
1-2 packets of stevia or 2-3 drops of french vanilla stevia
1 tsp. chia seeds
¾ cups of hot water
¼ cup almond coconut milk
1 scoops protein powder (I'm using SunWarrior Vanilla)
