Basil Cheese Roulade

Ingredients: 

1 plg cream cheese soft
4 oz Roquefort cheese soft
1 c baby spinach leaves
3/4 c fresh parsley
1/4 c fresh basil
1 clove garlic slices
3 tbsp olive oil
1 c parm cheese
1/4 c finely chopped walnuts
1/3 d finely chopped sun dried tomatoes


Bear cheeses until smooth
Line sheet w parchment
Lightly grease parchment
Spread cheese mix into 11x8" rectangle
Cover and chill 1 hour

Process next 4 ing until smooth
Stir in parm cheese, walnuts and tomatoes
Spread spinach mix over cheese rectangle
Using parchment as a guide roll up jelly roll fashion
Wrap in parchment folding down the ends to seal
Chill 2 hours
Remove paper and garnish
Serve w crusty french baggett or crackers or sliced crisp veg
