1 tbsp all purpose flour
3 stalks celery, diced
3 cloves Minced garlic
1 can tomato purée
1 tsp nutmeg
1/2 tsp cumin
Salt to taste
Slice low fat Gouda/Swiss/cheddar
Frozen puff or shortcrust pastry
Mix mince beef, all purpose flour, salt, nutmeg, cumin in a bowl well. Set aside.
Preheat oven to 170•C
Add 2 tbsp oil to a pan, add garlic and stir fry till soft then add the diced celery, fry for 3mins. Put the mince beef into the pan and fry till lightly brown. Pour the tomato purée into the pan, mix well and cover to simmer for 5 mins.
Allow beef mix to cool slightly. In the meantime, roll out the pastry and line pie tins with pastry. Fill pie tins with beef mixture, top with a slice of cheese and a layer of pastry, trim off edges and brush lightly with beaten egg. Bake in preheated oven for 15-20 mins till pies are lightly brown on top. Remove from oven, serve hot!
