1 cup corn
1/2 cup sour cream
1 can (4.5oz) green chilies
2 cups Mexican cheese blend
1 can (10oz) red enchilada sauce
6 flour tortillas (8in)
Pre heat oven to 350*. brown and drain ground beef. Return to pan and mix in corn, sour cream, and 1 cup cheese.
In 13x9 baking dish spread 1/4 cup enchilada sauce. Spread 2tbs enchilada sauce on each tortilla. Then add 2/3 cup beef mixture to each. Roll and place seam side down in dish.
Cover with remaining sauce and cheese. Spray foil and tightly cover dish. Bake 45-50 minutes.
