FALAFEL
2 cups dry chickpeas — NOT canned
1/2 teaspoon baking soda
1 small onion, roughly chopped
1 cup fresh parsley leaves, minced
1/2 cup fresh dill fronds, minced
8 cloves garlic, roasted or peeled raw
1.5Tablespoon flour or chickpea flour
1 heaping Tablespoon cumin
1 Tablespoon ground coriander
1 Tablespoon salt
1 Tablespoon black pepper
1 teaspoon cayenne pepper
1/2 teaspoon ground cardamom
spray olive oil, for cooking
1 teaspoon baking powder
(for fluffier falafel)
HUMMUS TAHINI SAUCE
1/2 cup hummus
1/2 cup greek yogurt
1/8 cup tahini
1/2 of a lemon, juice only
2 Tablespoons olive oil
.25 to .5 cup hot water
GARNISH

Mediterranean pickles, sliced into
rounds or diced
