Biscotti

Notes: 

Biscotti is great with morning coffee. I like to wrap each piece in deli paper and tie it with kitchen string. That way it is easy to take it to go.

Ingredients: 

1/2 cup oil
1 cup white sugar
1 1/4 cup all purpose flour
1 cup coconut flour
1 cup almond flour
3 eggs
1 Tbsp baking powder
1 Tbsp vanilla, almond, or lemon extract.


  1. Preheat oven to 375
  2. Line baking sheets with parchment paper.
  3. In medium bowl, beat together oil, eggs, sugar, and extract until well blended. 
  4. In separate bowl,  combine flour and baking powder.
  5. Stir into the egg mixture to form a heavy dough.
  6. Divide dough into two peices. Form each peice into a roll as long as the baking sheet. 
  7. Place roll onto baking sheets adn press down to 1/2 inch thickness.
  8. Bake for 25-30 minutes until golden brown.
  9. Cool on wire rack.
  10. When cool enough to handle, slice each one crosswise into 1/2 inch slices.
  11. Place the slices cut side up on baking sheet and bake for an additional 6 - 10 minutes on each side.
  12. Slices should be slightly toasted.
  13. Cool and wrap in deli style wax paper.
