The burger falls apart easily. Add more veggies or freeze


1 can black beans, drained and rinsed

1 can organic refried black beans

1 egg

1 cup organic corn tortilla chips, finely crushed, plus a little extra for coating. (You may need more

depending upon how thick your refried beans are. The burgers should easily form and not fall apart)

2 garlic cloves, minced

1 small onion, diced

1/2 bell pepper, diced

1/4 cup cilantro, chopped

1 T parsley, chopped

1/2 tsp. sea salt

1 tsp. cumin

3 green onions, chopped

Combine all ingredients and make patties. If the mixture is too loose, add a bit more crushed tortilla   chips. Press patties in extra tortilla chips to coat. Sauté in olive oil over medium heat and cook burgers   until both sides are browned and cooked through. Serve on mixed greens with guacamole and pico de   gallo.
