3 (15.5-ounce) cans black beans
2 (11-ounce) cans extra sweet white/yellow corn
1 bell pepper (any color), diced
1 medium tomato, diced
1 small red onion, diced
1/2 cup red wine vinegar
1/4 cup lime juice
2 tablespoons vegetable or canola oil
Cilantro (if desired)
