Brats and Beer Cheddar Chowder

Ingredients: 

2 tablespoons butter or margarine
1 medium onion, finely chopped (1/2 cup)
1 medium carrot, coarsely shredded (1/2 cup)
3 large shallots, chopped
1 14-oz can vegetable brother or 1 3/4 cups vegetable stock
1/3 cup all-purpose flour
1 cup whole milk, half-and-half or light cream
1 teaspoon caraway seeds, crushed
1/4 teaspoon ground black pepper
10 oz. Wiscousin Aged Cheddar cheese or sharp cheddar cheese, shredded
4 cooked smoked bratwurst, knockwurst or Polish sausage (about 12 oz total), halved lengthwise
1 12-oz can beer or 12-oz bottle ale
