Butternut Squash Gratin

Ingredients: 

2 pound (1 medium) butternut squash, peeled
½ cup 2% reduced fat milk
2 garlic cloves, minced
1 small shallot, minced
1 tablespoon chopped fresh thyme (i have)
1/3 cup fresh grated parmesan cheese
¾ teaspoons kosher salt, divided
Freshly ground black pepper, to taste
Cooking spray
2 tablespoons unsalted butter
½ cup whole wheat panko breadcrumbs
