Canadian Oaty Buttermilk Hotcakes

Notes: 

Makes about 16 small pancakes, I find this about feeds 4. I split it in half when it is just me, and triple it when we have 12 at Christmas time.

Ingredients: 

1 cup rolled oats
2 cups buttermilk, or part yogurt and milk, or part sour cream and milk
2 eggs, beaten
2 tablespoons oil or melted butter
1 cup flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt


  1. combine buttermilk and oats, mix and let stand 5 minutes.
  2. Sift dry ingredients together (if that is your thing, I never do, but I always put the the baking powder on top of the flour before I mix the flour in.
  3. Add eggs and oil to oat mixture, mix well
  4. Add dry indredients and mix.
  5. Pour 1/4 cup batter onto hot griddle for each pancake.
  6. These take longer to cook, so you may need to turn the temp of the pan down, especally as you go through the batch.
