Carrot Cake

Ingredients: 

4 eggs
1 3/4 cup sugar
1 cup oil
1 tsp vanilla

2 1/4 cups flour
1 tsp baking powder
1 tsp baking soda
Pinch salt
1 lb carrots grated ( in processor)
1 cup walnuts chopped in large pieces
1 jar maraschino cherries with juice, diced


Add eggs to oil until blended
Add all liquids except cherries.
Mix Bp & bs into flour and stir into liquid mixture.
Add carrots, walnuts, cherries & mix well.
Butter tube pan.
Bake at 350 at least 1 hour.(1hr. 20 min)
