Cauliflower Kugel

Ingredients: 

1 cauliflower, trimmed & cut into florets
1 large onion, chopped
Olive oil
2 eggs
1/2 cups matzoh meal
Salt & pepper to taste


  1. Preheat oven to 400. 
  2. Add cauliflower florets to a large pot & cover with water. Bring to a boil & then simmer about 8-10 min, until cauliflower is fork-tender. Drain. 
  3. While cauliflower is cooking, saute onions in a drizzle of olive oil Until golden brown & soft. 
  4. In same pot in which it was cooked, mash cauliflower with a fork until all large lumps are broken down. 
  5. Add add cooked onions, eggs, matzoh meal, salt, & pepper. Mix to combine. 
  6. Spoon mixture into 8x8 baking tin & bake for about 30 min, until top is golden brown.
