Chicken Satay with Peanut Noodles


1/3 cup reduced sodium soy sauce
1/2 cup grapeseed oil
2 tablespoons freshly grated ginger
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
2 boneless, skinless chicken breasts cut into 3-inch strips
8 ounces whole wheat spaghetti
1/2 lime, juiced
2 cloves garlic, minced
2 tablespoons honey
1/2 cup creamy peanut butter
2/3 cup hot water
2 tablespoons reduced sodium soy sauce
1 medium cucumber, thinly sliced
1 teaspoon white wine vinegar
1 tablespoon honey
slight pinch of cayenne pepper (I used red pepper flakes)
