2 tablespoons coconut oil
1/2 cup scallions, chopped
1/2 cup fresh dill, chopped
2 1" pieces of ginger, peeled, grated
3 teaspoons coriander, fresh ground
1.2kg orange sweet potato, peeled, cut into 2cm cubes
4 to 5 cups veg or chicken stock
1 large granny smith apple, peeled, grated
1/2 -1 cup coconut cream
sea salt and pepper to taste
cilantro to garnish
