Crab and Ricotta Cannelloni

Ingredients: 

1 box cannelloni (12 shells)
1 cup ricotta cheese
3/4 cup parmesan, plus 1/4 cup for sprinkling
1 egg yolk
1/2 cup chopped fresh basil
1 pound crab meat
1/4 tsp. salt
1/4 tsp. pepper


Preheat oven to 350.

Cook and drain pasta (al dente). Mix cheese, egg yolk, crab, salt and pepper. Fill cannelloni (can do this with a snipped sandwich bag) and place in a buttered baking dish. Top with sauce of choice and remaining parmesan cheese.

Bake 15-20 minutes.
