Crockpot Stuffed Pepper Soup


Beef, Optional


3 c cooked brown rice
1 lb lean ground beef (optional)
1/2 c chopped green bell pepper
1/2 c chopped red bell pepper
1 c finely diced onion
3 cloves garlic, chopped
1 can (14.5 oz) petite diced tomatoes
1 3/4 c tomato sauce
2 c vegetable broth
1/2 t dried oregano
salt and fresh pepper to taste

  1. In a large skillet, brown ground meat on high heat and season with salt. Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic. Cook about 5 minutes on low heat.
  2. To crockpot, add tomatoes, tomato sauce, chicken broth, oregano, and season with salt and pepper to taste. Add beef and peppers mixture, cook on low 5-8 hours.
  3. Serve about 1 1/3 cups of soup in each bowl and top with 1/2 cup cooked brown rice (or stir rice in before serving).
