Cumin Chili with Lentils & Corn

Ingredients

  • Celery, chopped
  • Carrots, chopped
  • Garlic, minced
  • Green lentils
  • Chopped sirloin
  • Cumin
  • Salt
  • Pepper
  • Siracha, to taste
  • Sugar, to taste
  • Basil, chifonnade for garnish
  • Toast or chips, for serving

Directions

  1. Put celery, carrots, garlic in a pot with water. Add lentils. Cook for 30 mins.
  2. In separate pan, brown chopped sirloin on low heat. Pour off excess fat.  Season liberally with cumin, salt, bepper.
  3. Add lentil mix to beef. Cook together for about 5 minutes.  Add siracha.  Add sugar too taste.
  4. Serve with toast or chips

Note:  i made this with leftover lentils
