2 medium zucchini, roughly 3 cups diced (see note)
½ cup onion, diced
2 teaspoons olive oil
1 ½ teaspoons cumin
¼ teaspoon salt
1 roasted red pepper (see note)
1 can pinto beans (1 ½ cups)
⅓ to ½ cup minced cilantro
1/4 cup pepitas
1 lime
Salt, as needed
