11⁄3 lbs chicken thighs, boneless
2 yellow onions or 1 leeks
1 thumb-sized piece of fresh ginger
2 garlic cloves
1 – 2 red bell peppers, sliced
½ red chili pepper, finely chopped
1 can coconut cream
