Ingredients: 

Base
1 1/2 cups cashew nuts
1 cup coconut – flakes or desiccated
1/3 cup coconut oil, softened
1/3 cup brown sugar
1 tbsp lemon zest
1 1/4 cups ground almonds

Filling
1 x block Whittaker’s 62% dark block
1 x 400g tin coconut cream (not milk). Look for a brand which doesn’t contain stabiliser, such as Fia Fia, Ceres or Ayam.
1/3 cup icing sugar
1 x 250g tub dairy-free cream cheese (see below)
2 egg whites

Topping
3-4 punnets fresh strawberries
1/4 cup berry jam mixed with 2 tbsp water
