5 tbsp vegetable oil
2 onions, peeled and chopped
1 red bell pepper, chopped
1 jalepeno pepper, chopped
2 tbsp minced garlic
3 15-ounce cans black beans, rinsed and drained
1 cup cheddar cheese
1 cup cream cheese
dash or salt
1/2 cup and 2 tbsp fresh cilantro, chopped
Wrap tortillas in foil and place in oven heated to 350 degrees F.
Bake for 15 minutes or until heated through.
Heat oil in a 1 inch skillet over medium heat.
Place onion, bell pepper, garlic and jalepeno pepper in skillet.
Cook for 2 minutes, stirring occasionally.
Pour beans into skillet.
Cook 3 minutes stirring.
Cut cream cheese into cubes and add to skillet with salt.
Cook for 2 minutes, stirring occasionally.
Stir cilantro into mixture.
Spoon mixture down evenly in center of warmed tortilla.
Add cheddar cheese and roll up tortillas.
Serve immediately.
