Feta Cheese Tartlets

Ingredients: 

8 slices bread from a medium-cut large loaf
Generous 1/2 cup butter, melted
1 cup feta cheese, cut into small cubes.
4 cherry tomatoes, cut into wedges
8 pitted black or green olives, halved
8 quail's eggs, hard-cooked
2 tbsp olive oil
1 tbsp wine vinegar
1 tsp whole-grain mustard
Pinch of superfine sugar
Salt and pepper
Parsley sprigs, to garnish
