Fiesta Casserole

Ingredients: 

1 lb ground beef
1 large onion, chopped
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
2 C chunky tomato salsa
1 can diced tomato with juice
2 C fresh or frozen corn kernels
12 6" tortillas
1 1/2 C shredded cheddar cheese


  1. Brown meat in skillet with onions and pappers until meat is no longer pink (about 10 min); drain.
  2. Stir in salsa, tomatoes with juice, and corn; bring to boil and remove from heat.
  3. Spread 1 C of mixture on bottom of 9x13 baking dish; top with 6 tortillas, overlapping. Spoon half meat mixture, then 1/2 cheese, then tortillas and remaining meat.
  4. Cover with foil; bake 25 min.
  5. Uncover, sprinkle remaining cheese and let stand 5 min before serving.
