Flat Enchiladas

Ingredients: 

1 lg can Las Palmas or Ortega enchilada sauce
1 red onion – chopped
½ lb sharp cheddar cheese
1 egg – fried
1 dozen corn tortillas
1 – 2 cups oil – for frying


Fry tortillas in oil, while heating enchilada sauce. Place 1 tortilla on plate and cover with warmed sauce. Top with cheese and onions. Repeat as many layers as desired. Top with a fried egg.
