basil leaves
8 skewers, soaked in water 20 minutes prior to frying
prepared batter (recipe follows)
canola oil for frying

1/4 cup plus 1 tablespoon flour
1/4 cup cornstarch
1/4 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
1/4 teaspoon granulated garlic
1 egg
