Funeral Potatoes

Ingredients: 

You’ll need one 30-ounce bag of frozen shredded (not cubed) hash brown potatoes.

3 tablespoons unsalted butter
2 onions, chopped fine
¼ cup all-purpose flour
1½ cups low-sodium chicken broth
1 cup half-and-half
1¾ teaspoons salt
½ teaspoon dried thyme
¼ teaspoon pepper
2 cups shredded sharp cheddar cheese
8 cups frozen shredded hash brown potatoes
½ cup sour cream
4 cups sour-cream-and-onion potato chips, crushed
