Gnocchi Nudo with Roasted Kale

Ingredients: 

16 oz gnocchi
1/2 teaspoon EVOO
Dash ground black pepper
2 oz grated or shredded parmesan cheese
1/4 cup toasted pine nuts

Kale
1 head leafy kale, stemmed and chopped
Olive oil spray
1/2 teaspoon salt
Dash fresh ground black pepper
3 cloves garlic sliced thin


For the kale:

  1. Preheat the oven to 400 degrees
  2. Spray a baking sheet with olive oil
  3. Lay chopped kale and garlic onto the baking sheet, then spray with olive oil
  4. Sprinkle with salt and pepper
  5. Bake for 10-15 minutesm stirring halfway thru to keep kale from burning. Remove when kale is crisp, but not brown

For gnocchi:

  1. Cook per package instructions, drain, and rinse.
  2. Place in large bowl. Toss with olive oil, pepper, and parmesan cheese.

To serve:

  1. Scoop ~2/3 cup gnocchi onto a plate; top with kale and 1 tsp pine nuts. Sprinkle with additional cheese if desired.
