Hell’s Gate Beef


Serves 4

500grams basmati rice cooked and cooled
2 sirloin steaks – fat removed
Finley diced sweet red pepper
Finley sliced sweet yellow pepper
Sliced spring onion

For the Hells Gate paste
4 cloves garlic
2 teaspoons minced ginger
2 teaspoon cumin seeds
2 teaspoons coriander seeds
1 small red onion diced
4 whole birds eye chillies
2 squirts of Tabasco
1 teaspoon shrimp paste
1 teaspoon palm sugar
3-4 lugs of plain veg oil to loosen
1 big squirt of tomato paste

For the beef marinade
2 tablespoons light soy sauce
Salt and pepper
sesame oil
