Ingredients: 

Ingredients: for 6 servings
2 Tbs. salt butter
1 large onion, chopped
1/2 bell pepper, chopped
1/3 c. thinly sliced green shallot (scallion) tops
2 Tbs. finely minced parsley

1/8 tsp. cayenne
1 Tbs. finely minced garlic
1/2 tsp. chili powder
2 whole bay leaves, crushed
1/4 tsp dried thyme
1/8 tsp ground cloves
1/2 to 1 tsp. salt
1/4 tsp. black pepper

1 lb. Andouille (or Polish, or French Garlic) sausages
sliced 1/2 inch thick and kept refrigerated
You can use hot dogs instead!

1 1/2 c. long grain white rice

1 medium can (14oz.) beef stock
1 can tomato sauce (8 oz)
1/3 cup water
