Layered Summer Fruits

Ingredients: 

800g watermelon, peeled and sliced
2 mangoes, peeled and sliced
2 pears, sliced
2 kiwis, peeled and sliced
250g strawberries, hulled and sliced
150g blueberries
1/2 cup squeezed orange juice (optional)
50g pistachio kernels, roughly chopped

LEMON SYRUP
1 tsp vanilla essence
1/2 cup caster sugar (optional)
2 tsp lemon zest
1 tsp rosewater essence


Layer fruits in a large transparent serving bowl. Place vanilla essence, sugar, lemon zest, rosewater essence and 1 1/2 cups of water in a saucepan and bring to boil. Reduce heat and simmer for 15 minutes or until slightly thickened. Allow to cool, then strain.

Pour the syrup over the fruits, and sprinkle with pistachios.

Alternatively, replace the syrup with 1/2 cup orange juice combined with lemon zest and rosewater essence.
