Lemon Coconut White Chocolate cookies.

Ingredients: 

1 stick of unsalted butter, softened
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
zest from one lemon
2 tablespoons lemon juice
1 3/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups sweetened coconut flakes (reserve ½ cup for rolling dough)
11 oz. bag of which chocolate chips.


Blend butter and sugars together.  Add egg, vanilla, zest of a lemon and juice, and mix.  Add flour, baking soda, and salt and mix until just incorporated.  Add 1 ½ cups of coconut and chocolate chips, and mix.  Roll spoonful of dough into reserved 1/2 cup coconut (I chopped the coconut down to be smaller flakes).  Bake 350 for 10 minutes or until set (the coconut toasts and burns quickly, so just keep an eye on them).
