Mario Batali's Braised Chicken with Potatoes

Ingredients: 

1 whole cut up chicken
2-3 tbs extra virgin olive oil
1 sliced red onion
6-8 thinly sliced garlic cloves
1 lb quartered red bliss or New potatoes
2 tbs tomato paste
2 cups water
1/4 cup roughly chopped fresh tarragon leaves
Kosher salt & pepper


  1. Preheat oven to 450. 
  2. Dry chicken well; season with salt & pepper. 
  3. Place a large cast iron or high-sided, ovenproof skillet over medium heat & add the oil. 
  4. Add chicken, skin side down & cook until well-browned on both sides, about 10 min total. 
  5. Remove chicken to a plate & set aside. 
  6. Add the onion, garlic, potatoes, & tomato paste. Season with salt & pepper.  Sauté for 3-4 min. 
  7. Add the browned chicken & the juices back into pan, nestling the meat in between the vegetables. 
  8. Add enough water around the chicken so that the skin is still exposed. Bring to a boil. (Can replace with wine, beer, stock). 
  9. Remove from heat & place in oven. 
  10. Cook about 30-40 min, until chicken is cooked through & potatoes are tender. 
  11. GRnish with fresh tarragon (or parsley, cilantro, arugula).
