Meatball zucchini skillet

Notes: 

Serve alone or over brown rice. Serves 6

Ingredients: 

1-2 T coconut oil
2 medium yellow onions, diced
2 lb. ground beef
1 T olive oil
4 medium zucchinis, cut into chunks
3 medium tomatoes, cut into chunks
Salt and pepper


  1. Heat skilled over medium-high heat.
  2. Add coconut oil and onions to the skillet. Saute for around 5 minutes until translucent.
  3. While the onions are cooking, roll the beef into small 1 1/2 inch ballsĀ (1 lb. of beef makes about 20 meatballs). Add the meatballs to the pan and cook for around 10 minutes, stirring them occasionally, flipping them over to get even cooking.
  4. While the beef is cooking, heat the olive oil in a separate skillet over high medium-heat. Add the zucchini and tomatoes, stirring occasionally until vegetables are tender.
  5. Combine the meatballs and vegetables in a large serving dish.
