Meatballs

Ingredients: 

2 slices white sandwich bread (no crusts), torn into small pieces
1/2 buttermilk
1 pound ground meat (preferably 3/4 pound ground chuck and 1/4 pound ground pork
1/4 cup freshly grated Parmesan cheese
2 tablespoons fressly minced flat-leaf parsely
1 large egg yolk
1 teaspoon garlic, finely minced
3/4 teaspoon salt
ground black pepper
about 1 1/4 cups vegetable oil for frying


  1. Combine bread and buttermilk in a bowl and let stand, mashing occasionally with a fork until a smooth paste forms, about 10 minutes.
  2. Place remaing ingredients in a large bowl along with the paste mixture.
  3. Mix evenly.
  4. Shape into 3 tablespoons of the mixture into a 1 1/2 round meatball (use a light touch)
  5. Pour the vegetable oil into a skillet to the depth of about 1/4 inch. Turn the flame up to medium-high.
  6. Test the oil is hot with a small amount of the meat.
  7. When the oil sizzles, add the meatballs in a single layer.
  8. Fry, turning several times until browned on all sides, about 10 minutes.
  9. Regulate heat to keep oil sizzling, but not smoking.
  10. Transfer meatballs to paper towels in order to drain grease.
