Mexican Chicken Quinoa Casserole Recipe

Ingredients: 

1 cup uncooked quinoa
1 Tbsp olive oil
1 yellow onion, chopped
1 green bell pepper, chopped
1 lb boneless, skinless chicken breast, cut into bite-sized pieces (about 2 large breasts)
1 Tbsp , plus 2 teaspoons chili powder
1 ½ tsp ground cumin
½ tsp kosher salt
½ tsp black pepper
¼ tsp cayenne pepper
1 tsp minced garlic (about 2 cloves)
1 can (15. oz) fire-roasted diced tomatoes, well drained
1 can (15. oz) black beans, rinsed and drained
1 cup plain Greek yogurt
¾ cup freshly grated cheddar cheese, divided
¾ cup freshly grated mozzarella cheese, divided
Fresh cilantro, for serving
