Notes: 

used 1 cup of green tomato salsa and 3/4 cup of ricotta cheese instead of 2 cups salsa
and used leftover fresh corn instead of the mexicorn

1 lb ground beef
1 cup long grain rice
2 cups water
1 (16 ounce) jar salsa
1 (11 ounce) can mexicorn
1 teaspoon chili powder
1/2 teaspoon salt
1 cup cheddar cheese, shredded
