Mexican Stuffed Green Peppers

Notes: 

This is a great way to use leftovers! Usually we make this after having Tacos with left over meat and Mexican rice.

Ingredients: 

4 Green peppers (red/yellow/orange are great too)
1 cup leftover taco meat
1 cup leftover Mexican rice (see our recipe)
1 cup salsa (optional)
1 cup shredded cheese (Cheddar or whatever)
1 tablespoon of olive oil


  1. Cut the tops off of the peppers and clean out seeds and ribs, microwave on medium for a few minutes to soften the peppers.
  2. In a bowl mix together rice, meat and salsa
  3. Stuff green peppers with mixture, place in a baking dish and cover with shredded cheese
  4. Bake in oven at 350 for about 30 minutes until cheese has browned.
