Mixed Grain Risotto with Squash, Tomatoes, and Basil

Ingredients: 

2 Tbsp. extra-virgin olive oil1/3 cup chopped onion1 small yellow squash , quartered lengthwise and thinly sliced1 small zucchini , quartered lengthwise and thinly sliced1/2 cup each brown rice and pearl barley and wild rice1/4 cup dry white wine (optional)6 cups low-sodium chicken or vegetable broth1/2 cup grated Parmesan , plus more for garnish (optional)1/4 cup chopped fresh basil , plus some whole leaves for garnish (optional)1 large tomato , seeded and dicedSalt and freshly ground pepper

Note: Instead of using three different grains, try 1 1/2 cups of a whole grain rice mix.
