Mom's Creamed Spinach

Ingredients: 

2T Chopped Onion
3T Butter
3T Flour
2t Salt
1/8 t Nutmeg
2 Cups Milk
2 10 oz Packages of Frozen Chopped Spinach
3 Hard Boiled Eggs


Directions

  1. Cook Onion in Butter, stir in flour, salt and Nutmeg. Add Milk gradually
    stirring constantly. Cook till Thick.

    Meanwhile cook spinach and drain very well. Squeeze all the water out.
    Stir into cream sauce with chopped eggs. Pour into greased 1 ½ quart
    casserole dish and top with ½ cup of breadcrumbs and 2 T Butter.

    Cook 20 minutes at 375 in covered dish
